This is my favourite stir fry to make ever! It is so easy and not to mention very tasty! I will be posting the original recipe as I do make some changes to mine!
1 cup of brown rice + 2.5 cups of vegetable broth = 3 cups of cooked rice
Veggie Stir fry:
1 tbs. of sesame oil
3 cups broccoli florets
2 cups of zucchini sliced then cut into 1/4 pieces
1 cup of sliced carrots
1/2 red pepper sliced
Teriyaki Peanut Tofu
- 1 block of firm tofu
- 1/2 tbs. of sesame oil
Teriyaki Peanut Sauce
- 4 tbs. of soy sauce
- 3 cloves of garlic
- 1 tbs. of sunflower butter
- 2 tbs. of sesame oil
- 1 tbs. of sesame seeds (optional)
Bring the vegetable broth to a boil and add the rice. It says it takes 55 minutes but I used minute rice so it only takes me 10 minutes.
While broth is boiling combine sauce ingredients in a bowl and set aside. Taste to see how you like. If you want to make it sweeter add more brown sugar or maybe you like the peanut butter taste add more! I use sunflower butter due to allergies!
In a frying pan add your sesame oil and fry up your tofu that you cut into cubes. You’ll know its ready to be flip when the tofu turns brown.
In another frying pan your going to fry up your broccoli in some sesame oil for a few minutes before adding the zucchini and carrot.
After a few minutes of that cooking add the red pepper until the broccoli is tender yet crisp.
Turn the pan back on that has the tofu in it, adding the sauce and cooking until it has thicken.
Serve with the vegetables and rice and enjoy! It takes me about 30 minutes to make and its something me AND the hubby love which is nice!
